Special Equipment: Eyebrow Protection
Ingredients:

1/4 cup butter

1 cup brown sugar

1/4 cup rum (dark rum preferred)

1/4 cup banana liqueur (or a little more rum in a pinch)

Small pinch allspice (works wonders here)

Pinch nutmeg

4 ripe but firm bananas (or 1 per person), peeled, sliced lengthwise and then crosswise (quartered)

High quality vanilla ice cream, divided into portions in freezer-to-oven dishes (e.g. ramekins) and kept in freezer until last minute
Steps:

Melt butter over medium heat, stir in sugar, cook until sugar dissolves.

Stir in banana liqueur, add nutmeg and allspice, followed by bananas.

Spoon sauce over bananas, and when banana sections soften, carefully add the rum (carefully because this could blow up which is fun but only if you’re ready for it).

Heat briefly, stand back, and ignite the rum with a long-handled match (ooh! aah!).

Serve over individual portions of rock-hard ice cream (hard ice cream and heat-proof bowls are important for what should be obvious reasons...).
